Since opening Kachka in 2014, the restaurant has been on a mission to showcase the beauty and breadth of food and drink from the regions of the former U.S.S.R. — especially vodka. Over the years, Kachka's housemade infusions became a signature of the restaurant, sparking curiosity and conversations at the table. But behind the scenes, co-owners Bonnie and Israel Morales always dreamed of something bigger: bringing distillation in-house.

Inside Kachka Spirits’ own distillery (est. 2025), they’ve taken years of tasting, serving, and educating on vodka and channeled them into spirits that are entirely their own. From beloved Kachka Horseradish Vodka to seasonal infusions like Hood Strawberry, Krambambulya and Rhubarb, every bottle reflects the craft and care that define Kachka. Upon launching Kachka’s distillery, one of the first bottlings was Kachka’s own Classic Wheat Vodka — developed through careful trial and error in the Russian tradition and distilled with Portland’s pure water. Smooth and versatile, it’s the base of Kachka’s signature martinis, and a favorite to sip ice cold with caviar.
